BBQ Beef Sliders with Onion Strings

Easy Slow-Cooker BBQ Brisket from Chow.com combines Southwest and sweet in both a meat rub and a BBQ sauce that slow cooks with the beef. I served this sandwiched between slider rolls, adding fried onion strings. It’s been a few months since I made this (a lagging post), but I think I remember I didn’t have quite enough of the BBQ sauce to add to the sliders so our favorite Oklahoma BBQ sauce was used instead. Next time, I’ll prepare another half recipe of the sauce, simmer it a bit over the stove and use it to give the beef a good drenching prior to service.

About those onion strings  – I don’t use a cut and dried recipe, but here’s a good one from Mr. Food. I salt mine slightly with kosher salt, but don’t make them very often because it is extremely dangerous for me to be standing next to a plate of cooling onion strings. Slicing them thin and using a sweet onion make ‘em go down way too easy.  If you love onion rings, but have never cooked up a batch of these, you really should indulge yourself. :-) Enjoy!
